I have been making this chili for … well  …  since right about the time the last episode of Dallas aired and a dozen eggs cost less than a dollar.

It’s very simple, it’s easy, it doesn’t take hours to make.

I keep it and use it often because it gets such rave reviews.

We don’t like hunks of warm tomatoes, so you won’t find any here.  And most of us don’t like peppers or chiles.  So you won’t find any of that either.  But, if that’s what you like, by all means throw ’em in there!

Lets get cookin’!

Simply Delicious Chili

3/4 lb ground beef or turkey

1 onion, chopped

1 can kidney beans, undrained

1 (6 oz) can tomato paste

1/2 cup water

2 tsp chili powder

1 clove garlic, minced

dried oregano

salt to taste

In a nonstick skillet, cook the meat and onion.  Stir in all remaining ingredients.  Cover and simmer for 20 minutes.  Uncover and simmer until thickened if needed.

Served with cornbread and salad, this recipe makes just enough for Texas Guy and I and the two small girls.  And maybe enough for his lunch the next day.
