We love this stuff!

We eat it like a complete dinner in a bowl.


It’s embarrassingly simple to make.

“Simple”  …  music to my ears!

It’s not a secret.  …  I’m sure plenty of you have made it.

But, I’m going to share it with you anyway.


Fried Rice

3 cups cooked rice

I make the rice earlier in the day or a day or two beforehand and then use it cold right from the fridge.

Use any rice.  I used white this time.  Because of the soy sauce and seasoning packet, you could try to substitute part or all of it with brown rice and get away with it even if your family prefers white over brown.

Vegetable oil

Soy sauce

1 fried rice seasoning packet

Here it is ... you've probably seen these in your grocery store.


2 1/2 cups peas, cooked/hot

2 1/2 cups diced carrots, cooked

5 eggs, beaten

5 – 7 1/2 oz cooked chicken, cut or torn into small pieces

Simply follow the directions on the back, using the amounts here instead.

How simple is that?!  With a glass of milk, this feeds 4-5 people  …  Enjoy!!
