One day, my children decided to claim their favorite dinner in my recipe collection.
This one is Bug’s favorite.
It’s a delicious spin on macaroni and cheese.
Delicious!
And simple to make!
Hooray!
Enjoy!
Macaroni and Cheese Casserole
8 oz rigatoni or ziti
1 Tbsp oil
1/2 small onion, chopped
2 Tbsp flour
2 cups milk
1/4 tsp salt
1/8 tsp white pepper
4 oz mozzarella, shredded
5 oz frozen peas
4 oz cooked ham, cubed
Preheat oven to 350°.
Cook noodles to al dente, drain, and return to pot.
In a saucepan heat oil over medium heat. Add onion and saute until tender, but not brown.
Stir in flour and cook for 1 minute.
With a whisk, gradually add milk, salt, and pepper. Whisk constantly to avoid lumps.
Increase the heat to high and continue whisking constantly until the mixture comes to a boil.
Remove pan from heat and stir in half of the cheese.
Into the pasta, add the cheese sauce, ham, and peas. Stir to combine.
Pour into a shallow 1 1/2 quart casserole dish and top with remaining cheese.
Bake for 25 -30 minutes until bubbly, cheese melts, and browns slightly.
We’re trying this tonight! I can’t wait!
Yummers! Hope everyone likes it.
